Founded in Melbourne in 2019 by entrepreneur Aaron Trotman, NON was inspired by the zero-proof drinks programs of Europe’s Michelin-star kitchens. NON don't make mimics of any particular wine styles - they are creating something entirely new. Each expression is designed for a different dining moment, using real ingredients and structured with culinary techniques.
Developed by chefs, every bottle balances fruit, tannin, salinity and acidity. NON is served at some of the world’s most celebrated restaurants - including The French Laundry, The Fat Duck and Alinea. And now, you can enjoy it in the comfort of your own home.
